Tepache Cocktail

Cocktail Ingredients:

  • 2 oz white rum
  • 1/2 oz lime juice
  • 1/2 oz agave
  • 2 oz tepache (ingredients and instructions below)
  • Garnish with a pineapple wedge (optional)

Cocktail Instructions:

  1. Add the first three ingredients to a shaker with ice.
  2. Shake for 20 seconds and strain into a chilled glass.
  3. Top with the tepache and stir gently.
  4. Garnish with a pineapple wedge if desired.

Tepache Ingredients:

  • 2 Ripe Pineapple or just the peels
  • 2 cup of organic sugar
  • 2 stick cinnamon
  • 6 cloves
  • 4 quarts of filtered water

Tepache Instructions:

  1. Rinse the pineapple and use a sharp knife to cut the peel and slice or chop the pineapple core.
  2. In a large glass pitcher, place the pineapple peels, pineapple core, sugar, cinnamon stick, cloves and the 2 quarts of water.
  3. Cover the pitcher with a cheesecloth in a loose manner that allows the brew to breathe. Let it sit on your countertop for 24 for hours (12 hours if you live in a hot area). With a wooden spoon, remove the white foam that has formed on top of the liquid and mix to avoid spoilage. Loosely cover again and let rest for another 24 to 36 hrs. DO NOT let it ferment longer unless you want it to turn into pineapple vinegar.
  4. Strain the liquid of your pitcher and place in another pitcher with lots of ice. Taste for sweetness and add sugar to your taste.

  • 2 organic oranges, freshly-squeezed

Mocktail Instructions:

  1. Add the orange juice, lime juice and cooled honey simple syrup to a cocktail shaker and shake.

Simple Honey Orange Syrup Ingredients:

  • 2 cup honey
  • 1 orange (peel)
  • 2 cup water

Simple Honey Orange Instructions:

  1. Add the honey and water into a small saucepan over medium heat.
  2. Bring to simmer over medium heat until honey has completely dissolved. Stir occasionally.
  3. Remove from heat. Add peels of the orange.  Let infuse for 20-30 minutes, covered.
