Got a sweetheart with a sweet tooth? Surprise your loved one with a batch. This classic recipe is easy to follow and results in a delicious, homemade treat. They're guaranteed to sweeten any day.
Ingredients:
2 cups all-purpose flour
1 cup sugar
3 tsp baking powder
½ tsp salt
2 eggs
1 cup half-and-half cream
½ cup canola oil
1 tsp lemon extract
1 cup raspberries

Directions
Step 1:
Combine the flour, sugar, baking powder and salt in a large bowl.
Step 2:
Whisk the eggs, oil, cream and lemon extract in another bowl. Stir into dry ingredients just until moistened. Fold in raspberries.
Step 3:
Fill greased jumbo muffin cups two-thirds full. Bake at 400° for 22-25 minutes, or until a toothpick comes out clean.
Step 4:
Cool for 5 minutes before removing from pan to a wire rack.
Serve warm and for and extra touch - add som extra fresh raspberries on top!
