Looking to score points with friends and family this Thanksgiving? Try our delicious Apple & Lemon cake that will make you the Bree Van de Kamp of your group.

5 1/2 ounces (150 g) butter
2/3 cup (1 3/4 dl) sugar
3 eggs
1 1/4 cup (3dl) flour
1 teaspoon baking-powder
Zest of 1 lemon
Juice of 1/2 a lemon
4-5 apples peeled and thinly sliced. (Unpeeled if the apple peel is thin)
3 ounces (1 dl) almonds, blanched and chopped
Sugar to sprinkle on top
Desiccated coconut

Preheat the oven to 400 degrees Fahrenheit (200 degrees Celsius).
Melt the butter and let it cool. Whip the eggs with the sugar until it’s white and puffy. Add the butter, lemon zest and juice. Stir in the flour together with the baking-powder.
Grease the 10-inch spring-form (26 cm in diameter), pour in the desiccated coconut and shake the tin so the coconut sticks. Pour the mixture into the baking-tin. Put the apple slices close together into the mixture, Sprinkle the almonds and the sugar over the apples. Bake the cake for 50-60 min. Let it cool for some minutes and remove the spring.

Serve it lukewarm or cold.
